Oma and Spätzle

A super-satisfying dinner or side dish!

2 cups spätzle, use gnocchi in place if desired
3 ounces Oma, small dice
3 cups white onion, sliced
3 tablespoons butter
1 teaspoon vegetable oil
1 tablespoon pine nuts, toasted

In saucepan, melt butter over medium-low heat. Add onions and slowly cook until golden brown, 20-25 minutes. Set aside.

In medium sauté pan, heat oil over medium heat.  Add spätzle and sear sides until crisp. Reduce heat to low, add onions and Oma cheese.  Remove from heat, add pine nuts and transfer to serving dish.  Garnish with freshly cracked black pepper.
